Both Maya and Max have had sculpting tools built in for several years. It just that they aren't really that extensive and certainly can't handle uber high poly counts. The artist I saw basically created the tree, which was the centerpiece of the ad, in 3D Coat, starting with the Curves tool, and took it all the way through the Retopo > UV > Paint process.
