How would you sculpt this rock surface?

There are a number of different tools/brushes you could try. In Voxel mode, the PLANE tool and the SCRAPE Brush would be good. There are actually a number of brushes with similar functionality as the Plane Tool built in. You just check to see if the brush/tool has the ON PLANE option in the toolbar (above the viewport). If it does, you can check that and have nearly identical options to set your plane as the PLANE tool.

Even the Cutoff tool has it, as does the Flatten Brush, in Surface mode. In the Presets panel, the TRIM preset should be similar to Trim Dynamic in ZB. Polish Crisp is like hPolish in ZB, LC CREASE and LC GROOVE is similar to Dam Standard in ZB. You can tweak the settings (in toolbar, Brush Options panel, etc) and if you want to update the preset, just RMB the preset and choose Update Presets.

Hold up, I can't figure out where that is. Is it an icon, or does it say, "ON PLANE"?

It's only available with certain brushes that cut away, like CUTOFF, FLATTEN, and in Voxel mode, CARVE and even VOX HIDE148301361382.jpg
