Baked texture seems to work, but only default shader is showing

Ok, sorry for the plethora of posts! Since this is a different issue from the others I thought it best to post it separate.  I found lots of videos finally to walk me through the baking from high poly to low poly.  I got it to work once, but now when i take this high poly https://gyazo.com/946485521c1d46eed4f7a8ef34918691 and bake it onto the low poly model I only seem to get the shader and not the actual textures in the first picture:  https://gyazo.com/9b3e9f4bf708091c34361d28160a54a9.  Since the tutorials only show successful bakes, I have no idea where I went wrong.

The paint objects and surface materials all have the basic shader.  When i was setting the cage, all looked good, nothing showing where it shouldnt (except one tiny spot).  So, how come my textures didnt transfer over?  Where did I mess up?

Hmm ok further on it, not sure what I did but it seems to be transferring now.  Trouble is, i have so many layers that I cannot tell what is what.  Which ones I made, which are generated and which I should actually be using.  is there some trick?.

I continue to have the problem of baking the textures just to have them come out as the default shader or the expected texture but only as a flat color.  I have been going back trying to make all the names of the pieces, various uv sets etc, so that all are the same.  As I went to reapply textures, and used the gizmo to adjust size I noticed this VERY  weird artifacting showing up as i rotated the texture gizmo.  I do not see it in any of the work spaces like this, only when using the gizmo.   So, I exported the scene out to objs and took them into maya - no funny business showing there.  It is only when using the texture gizmo that I see anything like this.  Any idea what this is and if it might be the cause for my baking failures?  Any idea how to fix this?  Any assistance would be greatly appreciated!

The file looks like this in Maya - https://gyazo.com/24a44f6eecc288f07f8d38b87b131ca9  - no signs of anything odd.

If only need to transfer textures, use Transfer maps tool in Maya.

This quick video covers baking diffuse or color maps from your high polygon mesh in Maya to your UV mapped, low resolution model in Maya for use with texturing for game art creation.

Hi Carlosan, thanks for getting back to me, I will have a look.  I exported both high and low poly to take to maya and I find that my high poly is minuscule and does not match up with the low poly one.  Could this be part of my problem?  Any idea why the high poly would be teeny and the low poly ginormous?  Could this be part of the baking issue?

I had exported the low poly at one point and took it back to an older version of the horse file.  I guess when i imported and saved in maya the low poly must have changed size or something. Is there some trick to making them save out at the same scale?
