Right Click on any shader and choose "Select as Default Shader"  Now that becomes your default shader.

There is one called default Shader. If you do not like the color, RMB on the shader and edit it's properties. 

You may also construct new shaders based off anyone you see in the panel thus creating your own shader for using as Default. This is what I do as each artist tends to like his own version of a digital clay look. :)
