Voxel, Surface, Merging to the paint room etc... Yes you can paint over a shader if you are in Surface mode. Switch to the paint room and use the regular paint tools available. You are vertex painting without the need of a uv set but you will have to have a high polygon count to have more quality in the painting. The more vertices you have the finer the painting. """Important"" Never paint on Layer "0" it is reserved for 3DC use... In the paint room hide the layer/layers that has the paint information or delete the layer/layers. The shader will be shown in it's default state whether the grey shader or any other shader. Answers based upon information given. I did not talk about baking (merging) the shader and paint layers to the paint room if you need them.
